Brut Sous Bois Champagne from Billecart-Salmon
For the Dad who loves Champagne— Champagne Billecart-Salmon is a family-owned Champagne house that was founded in 1818 by Nicolas François Billecart and Elisabeth Salmon, and the 7th generation of the family, Mathieu Roland-Billecart, runs the house today, and is also the father to two children. The Brut Sous Bois is entirely vinified in oak, adding a complex aromatic character, and is composed of the three Champenois grape varieties in equal parts (Chardonnay, Pinot Noir and Meunier). It is aged on the lees, or residual yeast cells, for 6-7 years, resulting in creamy, grilled brioche notes. It is the perfect Champagne to pair with grilled seafood, chicken or portobello mushrooms, and can even work well with a steak.
