Sometimes, mornings take the cake — especially ones that involve actually fluffy (or crispy) pancakes. Long Island is home to its fair share of diners and delis, meaning it’s not a tall task to find a tall — or short — stack of pancakes. We may be biased, but North Fork residents and visitors have it good when it comes to finding perfect pancakes. The number of diners, straightforward delis, quaint restaurants and upscale yet approachable brunch spots give diners a chance to have their pick of settings.

Upon meeting Brian Quillin at his home music classroom in Greenport, it quickly becomes clear that he’s found his calling as a private voice teacher. It’s not his deep knowledge of music theory, skills on piano and guitar, or crystal-clear singing voice that give away his proficiency in this new career — though those are vital tools in his belt.
