    Copycat Olive Garden's Chicken Scampi Recipe: Easy and Delicious!

    Chicken scampi is one of my favorite items to eat when I go out to eat at restaurant's but I hate the high price that comes along with it. So I decided to see if I could make a recipe that tasted as good as the restaurant's or better. I will warn you that this recipe is a little more hands on but it is really easy to make, so I usually only make it for special occasions. You will need the following ingredients:

    Recipe:

    1 pound of boneless chicken breast

    1/2 of a colored bell pepper, sliced thinly

    1/2 of a green bell pepper, sliced thinly

    1 large onion, sliced thinly except for about 2 tablespoons

    2 cloves of garlic, minced

    1 cup of white wine

    1 cup of heavy whipping cream

    1/2 teaspoon of italian seasoning

    1/4 cup of bread crumbs

    2 tablespoons of butter

    2 tablespoons of oil

    1/4 cup of flour

    red pepper flakes, salt and pepper to taste

    1/2 pound of pasta cooked according to directions

    In a small bowl combine the salt, pepper, italian bread crumb and flour and mix together.

    Prepare your chicken breast by trimming the fat and then slicing it into thin cutlets. You can even cut the cutlets in half in you wish to. Tip: You could also use chicken tenderloins for this step.

    Preheat a large skillet to medium high heat and add the oil. Place the chicken into the flour mixture and coat all sides. Place the chicken into the hot oil and cook until the chicken is golden brown and the internal temperature is 165 degrees. This will take about 8 - 10 minutes.

    Meanwhile, place a medium skillet on medium heat and add the butter, 2 tablespoons of diced onion and the garlic and cook until the onions and garlic are soft, Make sure you don't burn the garlic.

    Add the cup of white wine and simmer for 10 - 15 minutes, or until this has reduced by half.

    When the chicken is cooked through, remove it from the skillet and add the vegetables and cook until they get as soft as you like them.

    Add the chicken back in the skillet with the vegetables and turn off the heat.

    Add the heavy whipping cream into the skillet with the wine and simmer for another 10 minutes. You do not want to boil this cream as you do not want it to curdle on you.

    Add the cooked noodles to the sauce then you can serve the noodles and add the chicken and vegetables over the top or you can just mix it all together like I do and serve it like this. Enjoy!

    Note: If you do not like to cook with white wine you can substitute chicken broth for the wine.

    I like to serve this just as it is. It is such a rich and hearty meal I don't usually serve it with bread or a salad but you certainly could if you wished too.
