    Ingredients:

    • 2 tablespoons melted butter (for greasing)
    • 1 package (24 oz) Hawaiian sweet rolls
    • 1/4 cup melted butter
    • 2 tablespoons granulated sugar
    • Zest of 2 lemons (divided)
    • 3 cups milk
    • 1 box (3.4 oz) instant lemon pudding mix
    • 1 box (3.4 oz) instant cheesecake pudding mix

    Frosting:

    • 4 oz softened cream cheese
    • 2 tablespoons milk
    • 1/3 cup powdered sugar

    Directions:

    1. Preheat & Prep: Preheat your oven to 350°F and coat a 9x13 baking dish with 2 tablespoons of melted butter. Arrange the Hawaiian rolls in the prepared dish.
    2. Prepare Rolls: Using a knife, slice an “X” into the top of each roll, being careful not to cut all the way through. Use the handle of a spoon to create enough room inside the roll for the filling.
    3. Lemon Butter Glaze: In a small bowl, mix 1/4 cup melted butter, sugar, and the zest of 1 lemon. Drizzle this lemony butter glaze over the rolls and bake for 10 minutes.
    4. Prepare the Filling: While the rolls bake, whisk together both pudding mixes, milk, and the remaining lemon zest in a large bowl. Pour the filling into a piping bag (or a ziplock bag with a snipped corner).
    5. Fill the Rolls: Remove the rolls from the oven. Fill each roll with the pudding mixture, using the piping bag for easy application.
    6. Bake Again: Place the filled rolls back into the oven and bake for an additional 5 minutes until the filling sets.

    Creamy Frosting: In a small bowl, whisk together the softened cream cheese, milk, and powdered sugar until smooth and creamy. Drizzle the frosting over the warm rolls before serving.

    Storage:

    To store these lemon cheesecake rolls, cover them tightly and refrigerate for up to 3 days. Reheat in the oven at 300°F for 5-10 minutes or enjoy them cold. For longer storage, freeze the rolls (without frosting) for up to 2 months. When ready to eat, thaw overnight in the fridge and reheat before frosting.
