    West Lincoln restaurant announces plans to close

    WEST LINCOLN — Last September, Fatheads opened a permanent location in the West Lincoln community across the road from the school. It was previously a food truck in Summit but will soon be closing its doors for good.

    According to a public announcement on social media, Fatheads Owners Ashley and Jeremy Jackson plan to close the restaurant. Jeremy’s nickname is Fathead and is the inspiration for the name. Both love to cook.

    “We have been so blessed with the amazing support from this community in West Lincoln,” the owners wrote. “Our time here is coming to an end. We are still open until it’s sold or until the end of our property lease.”

    The property lease will expire in September and the owners do not plan to renew the lease. Fathead’s building will be up for sale and could make a great tiny home or small restaurant, the owners wrote. Everything must move including the equipment from the lot, the owners wrote.

    The restaurant is currently located at 990 West Lincoln Drive. The restaurant boasts hamburgers, sandwiches, loaded fries, nachos and “power bowls.”

    “ We are only selling because we just can’t keep up with demand,” the owners added. “ With small children we never know what each day holds and with a restaurant you have to be open consistently and we just can’t do that right now. So unfortunately we must let her go.”

    Before opening the restaurant, the couple owned a food truck under the same name and offered the same menu. Facebook posts by the business hinted at a possible return of the food truck once the restaurant closes.
