    If you’ve been to the Fort Greene farmers market and noticed a long line and nice-smelling potatoes, you’ve witnessed the effects of Brooklyn Curry Project. They’ve since stopped their weekly appearances, but the South Indian pop-up does events at a commercial kitchen in Downtown Brooklyn or sometimes at the Bed-Stuy coffee shop Commune—check Instagram for more details. The husband-and-wife team specializes in dosas (though they usually have a few other things like uttapam or idli). They take turns pouring dosa batter onto the flattop, swirling it around until it's so thin you can see through it, and then folding it around a heap of potatoes so that it’s crispy-crackly on the edges and soft in the center. Expect a wait—maybe bring a book—and order the whole menu if you've got friends in tow.

    Masala Dosa

    Each dosa comes with a cooling green chutney and lightly pickled carrots and cucumbers. Even though the masala dosa and the ghee masala dosa are similar, you need to get both. This one is simple—just dosa and potato—which allows you to taste the chip-level crispiness of the dosa and the baby-soft mashed potatoes all by themselves.
