    Pedroso's Pizza

Pedroso’s is a pizza machine. We don’t know any other place in Austin that can dish out textbook-ready versions of New York-, American-, Sicilian-, and grandma-style pies on a moment’s notice as seamlessly as we would build a Lunchables pizza. They’re top-notch, with chewy crusts, sweet, tangy sauce, and appropriately airy or thin bases (depending on the style). Not all of the signature topping combinations work, but you can very easily build your own on an excellent canvas. If the Pedroso’s name sounds familiar, that’s because they operate a few trailers around town, mostly parked outside of bars where you can grab a slice or a pie to enjoy with your beer. This particular location is their flagship—a brick-and-mortar space that shares a wall with Lala’s Little Nugget. There's no dedicated dining area (it’s more of a counter-service takeout operation), so find a seat at the year-round Christmas-themed bar next door and eat pizza under a reindeer-drawn sleigh to help set the mood.

Grandma Style Double Pepp N’ Peppers

This is our favorite of the styles at Pedroso’s. The crust is a little less airy than a Sicilian- or Detroit-style pie, but it’s still thick enough for some great chew. There’s a good amount of cheese, sauce, and pepperoni, though the raw serranos scattered across the top overpower everything else. We recommend ordering this style but customizing your toppings.

    American Style Trifecta

We mean this in the nicest possible way—this feels like something you’d get from Domino’s if the person behind the pizza tracker put just a little more tender loving care into each step. The crust is thick but soft, with a heftier layer of tangy sauce and plenty of cheese. The pepperoni, sausage, and mushroom toppings really drive home the American-style feel.

    New York-Style Pepp N’ Ricotta

It’s thin enough to develop a nice and crispy crust, but just thick enough that it doesn’t flop or sag when you pick it up. The ricotta on top is a little heavy for our liking, but the sauce, cheese, and basil are excellent. This is a pretty classic New York-style pizza, but just a few inches smaller than average.
