    Food temperature issues found at Crossville restaurant during inspection

    KNOXVILLE, Tenn. (WATE) — The failing restaurant this week is located in Cumberland County. Half a dozen critical violations were marked off by the inspector.

    The grade is a 69 at Tang Dynasty at 229 Interstate Drive in Crossville. A 69 is a failing score. A grade of 69 and below is considered failing. There has been a follow-up, that passing score in a moment.

    To begin with, hot and cold food temperatures were off. Cooked egg rolls, at 90 degrees, and shrimp, at 107, were not hot enough. The proper hot temperature is 135 and above to kill bacteria. On the cool end of the scale, shelled eggs in the refrigerator were at 62 degrees, but 41 and below is the correct temperature to slow bacterial growth.

    In dry storage, the inspector found a severely dented six-pound can of bamboo shoot slices. Dents along the seams of canned food can potentially break the seal and spoil the contacts. The can was thrown away.

    In the refrigerator, the inspector wrote that he found containers of food that were uncovered. There should have been a top or a cover on the food to protect it. In the walk-in cooler, plastic containers of raw chicken were improperly stored on the floor. The food should be off the floor up on food racks.

    Finally, the inspector wrote that the person in charge did not have managerial control due to so many critical violations.

    There’s been a reinspection at Tang Dynasty in Crossville. The original violations were checked, all had been corrected and the new grade is a 91.
