    Juicy-sweet peaches, cooling mint and fiery jalapeño come together in this crowd-pleasing salsa.

    Ingredients:

    • 4 diced ripe peaches
    • ½ cup chopped onions
    • ½ jalapeño (seeded and diced)
    • Zest and juice of 1 lime
    • 2 Tbs. chopped fresh mint leaves

    Directions

    • Yield: 4 to 6 servings
    1. In medium bowl, mix all ingredients until well-combined.
    2. Enjoy right away or cover and chill in fridge an hour before it's ready to serve.

    Spicy Mango-Peach Salsa with Wonton Chips

    To keep this dish gluten-free, serve with corn tortilla chips instead of homemade wonton chips.

    Ingredients:
    • 1 (12 oz.) pkg. square wonton wrappers, cut in half diagonally
    • 1 jalapeño, diced
    • 2 peaches, diced
    • 2 mangos, diced
    • 1 red bell pepper, diced
    • ¼ cup chopped fresh cilantro
    • 2 Tbs. olive oil
    • 1 lime, juiced

    Directions:

    • Yield: 6 servings
    1. Heat oven to 350°F. Arrange wrappers on baking sheet; coat with cooking spray. Bake 5 minutes.
    2. In bowl, toss next 6 ingredients and 2 Tbs. lime juice. Season to taste. Serve with chips.
