    Chocolate Whoopie Pies with Irish Cream Cheese Filling

    Whoopie Pies with Irish Cream Cheese Filling, a special recipe perfect for St. Patrick's Day.

    Ingredients:

    • 1 3/4 cups of self-rising flour 
    • 2/3 cup of cocoa powder
    • 1/2 cup of softened butter
    • 1 cup of granulated Splenda or sugar
    • 1 large egg
    • 1 teaspoon of pure vanilla extract
    • 1 cup of buttermilk, at room temperature

    Irish Cream Cheese Filling Ingredients:

    • 1 package (8 ounces) of cream cheese, softened
    • 1/2 cup sugar-free powdered sugar or regular powdered sugar
    • 1/4 cup of milk
    • 1/2 teaspoon of Irish cream syrup

    Note: If you do not have Irish cream syrup on hand, you can substitute it with pure vanilla extract.

    For those looking to add an extra touch of festivity to their St. Patrick's Day celebration, consider adding a drop or two of green food coloring to the filling.

    Instructions for the batter:

    In a large bowl, cream together 1/2 cup of softened butter and 1 cup of granulated Splenda or sugar. Add the egg, 1 teaspoon of pure vanilla extract, and 1 cup of buttermilk. Mix well. 

    Incorporate 1 3/4 cups of sifted self-rising flour and 2/3 cup of cocoa powder. Combine thoroughly.

    Drop spoonfuls of the chocolate batter onto greased baking sheets, ensuring they are spaced 2 inches apart. Bake for 11 minutes until the pies spring back slightly when touched and appear dry on top. Allow to cool on the pans for 5 minutes before transferring to a wire rack to cool completely.

    Irish Cream Cheese Filling Instructions:

    In a separate bowl, blend together cream cheese, Irish cream syrup, sugar-free powdered sugar or regular powdered sugar, and milk until smooth using an electric mixer for about 6 minutes.

    Assembling the whoopie pies:

    To assemble the whoopie pies, start by placing a spoonful of the Irish cream cheese filling on the flat side of half of the pies. Gently press the remaining pies on top to create a sandwich.

    After assembling, refrigerate the whoopie pies until they are ready to be enjoyed.
