    Mom's Tex-Mex Meaty Cornbread Recipe

    I am excited to share with you all my mother's delicious Tex-Mex meaty cornbread recipe. This hearty dish can be enjoyed on its own or paired with chili, red beans and rice, or refried beans. I am confident that you will find this dish to be both flavorful and satisfying.

    Ingredients:

    • 1 pound of ground beef
    • 1 large onion, finely diced
    • 1 bell pepper, finely diced
    • Green chili peppers (to taste)
    • 1 teaspoon of minced garlic
    • 1 teaspoon of seasoning salt
    • 1 teaspoon of freshly ground black pepper
    • 1 1/2 teaspoons of smoked paprika
    • 1/4 teaspoon of cayenne pepper flakes
    • 1 teaspoon of chili powder
    • 1 15-ounce can of cream-style corn
    • 1 can Rotel
    • 1/2 to 1 cup of pepper jack cheese
    • 1/3 cup of mayo
    • 1/2 can of cream-style corn
    • 2 cups of cornmeal
    • 1 and 1/3 cups of milk
    • 1 onion, chopped

    Instructions:

    In a large, deep cast-iron skillet, cook the ground beef over high heat for approximately fifteen minutes. Drain the excess grease once the beef has browned.

    Return the cooked meat to the skillet and add the diced onion, bell pepper, minced garlic, green chili peppers, seasoning salt, black pepper, smoked paprika, cayenne pepper flakes, and chili powder. Stir well.

    Mix in the Rotel, mayo, cream-style corn, green chili peppers, pepper jack cheese, cornmeal, milk, and chopped onion. Stir until well combined.

    Bake at 425 degrees for 35 to 40 minutes.

    Optional: Sprinkle cheese over the top of the cornbread before serving.
