    Beef, Bean, and Cheese Tacoritos

    Beef, Bean, and Cheese Tacoritos is a tasty and affordable meal option that will satisfy your cravings and extend your hard-earned money.

    Ingredients:

    • 2 pounds of ground beef
    • 1 medium onion, diced
    • 2 teaspoons of smoked paprika
    • 1 tablespoon of chili powder
    • 1 tablespoon of dried onion flakes
    • 1/2 teaspoon of garlic powder
    • 1 tablespoon of dried red pepper flakes
    • 1/2 teaspoon of seasoning salt
    • 1 teaspoon of freshly ground black pepper
    • 2 cups of refried beans
    • 1 cup of salsa (optional)
    • 1 cup of softened Velveeta cheese
    • 1/4 to 1/2 cup of sour cream, Greek yogurt, or mayonnaise (the amount depends on preference)
    • Flour tortillas (5-inch size recommended)
    • Butter for the skillet

    Instructions:

    In a skillet, heat 1 tablespoon of canola oil. Add the diced onion and cook until translucent.

    Add ground beef, smoked paprika, chili powder, dried onion flakes, garlic powder, dried red pepper flakes, seasoning salt, and black pepper. Cook for 12 minutes, drain excess grease, and add the refried beans and salsa. Stir well.

    In a bowl, mix softened Velveeta cheese and sour cream, Greek yogurt, or mayonnaise until creamy.

    Spread the cheese mixture evenly on the tortillas. Optionally, add additional sour cream.

    Generously, spoon the beef and bean mixture down the center of the tortillas.

    In a cast-iron skillet, heat butter and cook the tacoritos two at a time for 20 to 30 seconds on each side at low temperature.

    Serve and enjoy!
