Grilled chicken and cheese panini sandwiches

If you are looking for a way to make the most of your hard-earned money, here is a fantastic recipe that will not only help you stretch your grocery budget but also provide a cost-effective way to feed your entire family. These grilled chicken panini sandwiches are not only delicious but also incredibly filling and satisfying. With this recipe, you can make two paninis from one small chicken breast, but a larger chicken breast could make four sandwiches.

    Ingredients:

    • 1 skinless, boneless chicken breast, thinly sliced and grilled
    • 4 slices of thick bread (such as homemade garlic and herb bread)
    • 4 slices of American cheese
    • 1 to 2 tablespoons of mayonnaise
    • Butter or olive oil for brushing on the sandwiches before grilling

    Instructions:

Start by thinly slicing a skinless, boneless chicken breast and grilling the pieces, preferably on an indoor grill.

Next, spread mayonnaise on one side of each slice of bread. Place two slices of American cheese on each slice of bread, followed by the grilled chicken slices. Top with another slice of bread.

Preheat your panini press. If you do not have a panini press, a large skillet can be used along with a plate to press the sandwiches as they cook. Brush the outside of the sandwiches with melted butter or olive oil.

Transfer the sandwiches to the panini press or hot skillet. Close the lid of the panini press or use a heavy plate to press down on the sandwiches if using a skillet.

Grill the sandwiches to your desired level of crispiness, ensuring the cheese is melted and the bread is toasted.

    Serve and enjoy!
