    Indulge in a delectable one-pan breakfast hash that can be savored on its own or enhanced with a sprinkle of cheese. While I used pork bacon in this recipe, feel free to substitute with turkey bacon, Canadian bacon, ham, or sausage to suit your preferences. For a twist, try wrapping this flavorful hash in soft-shell tortillas to create mouth-watering country-style breakfast burritos. Alternatively, enjoy it atop toasted bread for a delightful meal.

    Ingredients:

    • 6 slices of bacon, fried and crumbled (reserve the bacon grease)
    • 2 large potatoes, diced (russet potatoes with peels on, or peeled if desired)
    • 4 large eggs
    • 1 small onion, finely diced
    • Seasoning salt to taste
    • Freshly ground black pepper to taste
    • Canola oil, if needed

    Instructions:

    In a large skillet, fry 6 slices of bacon over medium-high heat for 5 to 8 minutes on each side.

    Dice 2 potatoes and 1 small onion while the bacon cooks. Set aside.

    Transfer the fried bacon to a paper towel-lined plate to cool, then crumble it.

    Add the diced potatoes and onion to the skillet with the bacon grease. Add extra oil if necessary.

    Cook the vegetables until fork-tender and slightly browned, about 10 minutes on medium-high heat. Drain excess grease from the skillet, then add the crumbled bacon and stir.

    Crack 4 eggs into the skillet (whisking optional) and cook for an additional 5 to 8 minutes, stirring occasionally.
