    Bibibop opens first southside Indy location. Asian concept to launch other stores in 2024

    Bibibop Asian Grill has come to Indianapolis’ southside.

    The Chipotle-style, build-your-own concept opened a Greenwood-area shop at 8603 S. Emerson Ave. on Aug. 29.

    The chain has three northside area locations; at 4026 E. 82nd St. in Indianapolis, 9719 E. 116th St. in Fishers and 365 W. 116th St. in Carmel.

    More are planned.

    When will more Bibimap locations open?

    An Avon store is slated for a fall 2024 opening and one in Whitestown will open in December. Locations are being planned in Indianapolis, Lafayette and Fort Wayne for 2025.

    Featuring bowls based on the traditional Korean mixed-rice dish bibimbap, Bibibop was started in a Columbus, Ohio, suburb by Charley Shin.

    Shin, who grew up in Seoul, South Korea and attended Ohio State University, founded the Charleys Philly Steaks chain in 1986.
