    Amish Sawdust Pie

    Not long ago I was scrolling through the internet and came across an article about the 50 best church desserts. I saw a recipe for Sawdust Pie, and I was intrigued. I didn’t save the article or recipe and when I went back, I couldn’t find it. Finally, the internet came to the rescue, and I found it. It is an Amish dessert, but it wasn’t in any of my Amish Cookbooks.

    Of course, I had to make it. It is very good but a very different consistency from normal pie, a cross between the consistency of a light sweet bread and oatmeal pie. This recipe is very easy and quick, and you can serve it warm from the pie pan.

    Ingredients:

    · 1 unbaked pie shell.

    · 1 cup egg whites (about 7 or 8 eggs).

    · 1 ½ cup sugar.

    · 1 ½ cup graham cracker crumbs.

    · 1 ½ cup chopped pecans.

    · 1 ½ cup coconut.


    Directions:

    1. Chop the coconut in a food processor so it is finer and put aside. We’ll add this last.

    2. You will need to turn up the speed of your mixer as you add the individual ingredients. But only to stir the ingredients together.

    3. Mix the egg whites and sugar on low to blend.

    4. Next add the graham cracker crumbs.

    5. Then pecans.

    6. ‘Remember not to beat the mixture” add the coconut now until fully mixed together.

    7. Pour into unbaked pie shell and place in oven.

    8. Bake at 350* for 35-45 minutes.

    9. Use a toothpick to gauge if the center of the pie is still “wet” or “runny”. If it is after 35 minutes, keep checking every few minutes until your toothpick comes out relatively dry.

    10. Then, let cool to a temperature that you enjoy.
