    Chocolate Chip Apricot Cookies

This article was written with the assistance of AI.

The recipe for Chocolate Chip Apricot Cookies is from my cookbook “Easy Baking, Hershey’s Cocoa”. When I made them for the first time, they became a favorite of my family. Nothing is better than a Hershey Chocolate Chip Cookie, with oatmeal, and adding apricots to make a soft and chewy cookie that everyone will love. Change it up and use dried cherries, cranberries, or other dried fruit.

These cookies are perfect for any occasion. They are great for a snack or dessert, and they also make awesome cookies for gift giving. If you are looking for a delicious cookie, then these are the cookies for you!

    Ingredients:

1 1/2 sticks of butter softened.

    1/2 cup granulated sugar.

1/2 cup packed light brown sugar.

    1 egg

    1 cup all-purpose flour.

    1 tsp. baking soda.

    1 1/2 cups rolled oats.

1 2/3 cup (10oz package) Hershey's premier white chips (used chocolate chips).

    3/4 cup chopped apricots.

    Directions:

    1. Preheat oven to 375 degrees.

    2. In a medium bowl, cream together the margarine, sugar, egg, and vanilla extract.

    3. In a separate bowl, mix the flour, baking powder, and salt.

    4. Gradually add the dry ingredients to the wet ingredients, mixing until well blended.

    5. Stir in the chocolate chips and dried apricots.

    6. Drop dough by spoonful’s onto a lightly greased baking sheet.

    7. Bake for 10-12 minutes, or until the cookies are lightly golden brown and set.

    Enjoy!!
