    Ingredients:

    · 12 0z. Cranberries (fresh or frozen thawed).

    · 1 medium orange peeled and sectioned.

    · 2 tsp. grated orange peel.

    · 16 0z. strawberries (fresh or frozen thawed).

    · ¼ tsp. Ground cloves.

    · ¼ tsp. Ground cinnamon.

    · ¼ tsp. Allspice.

    · 4 cups granulated sugar.

    · 1 package fruit pectin (not the kind for low sugar)

    · ½ cup water.

    · ½ tsp butter


    Directions:

    1. Wash jars and lids in hot soapy water and rinse well in hot water. Turn jars upside down and let them dry. Put lids in a small saucepan and cover the lids with water and set aside.

    2. Fill a large sauce pot or canner halfway with water and turn on high heat.

    3. Put the small saucepan with the lids on a burner on medium heat to start boiling.

    4. Place cranberries and orange sections in a blender or food processor and process until ingredients are coarsely chopped.

    5. Add the strawberries, orange zest, and spices and blend until mixed well, not pureed.

    6. Add the fruit mixture and water to a 5 qt. Dutch oven or stock pot.

    7. Stir in the fruit pectin and ½ tsp butter to reduce foaming.

    8. Bring the fruit mixture to a rolling boil over high heat, stirring constantly.

    9. Add sugar and bring to a rolling boil stirring constantly again for 1 minute.

    10. Remove the pot from heat and skim off any foam with a metal spoon.

    11. Ladle the hot fruit mixture into the prepared jars and leave 1/4” space on the top.

    12. Wipe the rims and threads and center the lid and place the ring on top don’t screw on tight.

    13. When all jars are filled and covered with lids and rings add the jars carefully to the canner with tongs.

    14. Layer the jars where they are not on top of each other and there is 2” of water over the top.

    15. Place the lid on top of the pot and process for 10 minutes in boiling water.

    16. Turn off the heat and take the lid off the top and let the jars sit for 5 minutes.

    17. Remove the jars with tongs and sit on a clean towel and leave undisturbed for 24 hours, you should hear little pops when the jars seal.

    18. Check for seals and if any did not seal store in the refrigerator.
