IngredientsCLICK HERE TO SIGN UP FOR THE FREE TAPINTO.NET NEWSLETTER 4 garlic cloves, minced 1/4 cup chopped fresh cilantro, divided 1 1/2 Tbs avocado oil 1 1/2 Tbs Cajun seasoning 4 boneless center-cut pork chops (about 1½ pounds) 3 containers (4 ounces each) peach and mango fruit cups in coconut water 2 Roma tomatoes, chopped 1 red bell pepper, chopped 1/3 cup chopped red onion 1 tsp lime zest Directions Prepare outdoor grill for direct grilling over medium-high heat. In small bowl, stir garlic, 2 tablespoons cilantro, oil, seasoning and ½ teaspoon kosher salt; rub over pork chops and let stand 15 minutes. In large bowl, toss fruit cups, tomatoes, pepper, onion, lime zest and remaining 2 tablespoons cilantro. Makes about 3½ cups. Place pork chops on hot grill rack; cover and cook 8 minutes or until grill marks appear and internal temperature reaches 145°, turning once. Serve pork chops topped with salsa.
