    There’s a scrappiness to The Hummingbird that you wouldn’t expect from a place run by the former chef of flashy Peruvian restaurants like Rosaliné and Causita . But just when the corkboard ceiling, subway tile walls, and kitchen that spills into the cobbled-together dining room make you think you’ve got this Echo Park spot pegged, the most beautiful plate of ceviche ever seen lands in front of you. Follow that with peppery scallop aguachile, shrimp dumplings wrapped in sesame leaves, and thick crab handrolls tingly from jalapeño paste. The pink-lit space fills fast with tables swaying to ‘90s pop and sipping hibiscus iced tea (no booze just yet), but there are usually seats at the ceviche bar, where you’ll have a close-up view of the slicing and saucing.
